Cotswold lamb and mutton is juicy and tender with flavor that is non-gamy and buttery tasting; it's widely preferred over ordinary sheep meat.

The Cotswold's extremely desirable flavor and tenderness make it highly suited for buying and selling direct from grower to consumer.  Once tried, eager local buyers snap it up at excellent prices.

An impressive "steamship leg - o - lamb" like the one in the photo (right) weighs about 6 to 7 lbs.

Cotswold mutton is less gamy than lamb of many other breeds.

Most Cotswold lamb is harvested between 100 to 150 lbs. on the hoof--normal yield is about 35% (35 to 56 lbs. as wrapped cuts), after trimming out waste bone and/or fat.

This meat sold in many parts of the U.S. at an average of $5 to $6 per pound (whole-carcass) retail, farm-direct in 2008, only about $175 to $330 per sheep, plus butcher fee.
